Coconut Strawberry Parfait

Who doesn’t love a good Coconut Strawberry Parfait? But you want to avoid the calories, the artificial ingredients and the bloating that comes along with those fast food treats, right? I get it.
Just do this instead…
Coconut Cream Ingredients:
- 16 oz Copra Coconut Smoothie (use code: ChefCrush15)
- 6 tbsp of Zen Basil seeds (code: CRUSHFOSTER)
- 1-2 tbsp Copra Coconut Nectar (use code: ChefCrush15)
Directions:
- Combine all ingredients
- Blend for 1 minute
- Transfer to a mason jar and let set in the fridge for at least 30 mins to overnight.
Strawberry Compote Ingredients:
- 2 cups Strawberries
- 2 tbsp Copra Coconut Nectar
- 2 key limes squeezed
- 1 pinch sea salt
- 2 tbsp Alkanatur Water
Directions:
- Add strawberries and all ingredients to a small pot
- Simmer on low heat covered until soft
- Mash with a potato masher
- Continue to simmer unto compote forms
- Allow to cool before use
Crust Ingredients:
- Berlin Bakery Bread, toasted and cubed
- Add to a food processor with Date Sugar and a dash of cinnamon
- Process into breadcrumbs and set aside.

Building the Parfait
- Start with a short rocks glass or mason jar
- Add the crumbs to the bottom of the glass and press flat for the first layer
- Add 2-3 tbsp of Copra Coconut Cream as the 2nd layer
- Add 2-3 tbsp of Strawberry Compote as the 3rd layer
- Add 2-3 tbsp of Copra Coconut Cream as the 4th layer
